I often run out of ideas for breakfast and this simple, quick sandwich comes as a savior. Handy ingredients, Quick and different.
I learnt this from our friend Kishore’s Mom. On one of our umpteen unexpected visits to Kishore’s home around meal/snack time
Aunty had made these for us and how I loved them. Aunty used to treat us to lovely dishes from her kitchen…and she was so quick…and welcoming, just like Kishore and Leena. I am sure Kishore must not have eaten this for a while too- so I am going to send the link to him as soon as I am done posting this.
Ingredients-
Thick Curd- I cup
Bread Slices- 6 to 8
Green Chilies Chopped fine- 3-4 (as per taste)
Salt- as per taste
Pinch of Red Chili (as per taste)
Chopped Coriander
Cumin Seeds- 2 tsp
Ghee/Butter- 1/2 tbsp
Method-
Beat the curd until it is smooth and then add Salt, Red Chili, Cumin Seeds, Chopped Coriander, Green Chilies (You can wash the chilies 3-4 times with water and take their seeds out in case you want to tone them down) My husband loves the flavor of green chili- sometimes I don’t add the red chili.
In a Sauce pan add a tsp Ghee/butter and just put in a pinch of cumin seeds, after they splutter toast the 2 bread slices (both sides) on this. Spread a thick layer of curd mixture on top of one of the slices and cover this with the other slice. Let this toast for 2-3 minutes as you change the sides a couple of times. Take it off the heat, cut diagonally and serve!
You can add tomato and onions also to the curd spread.

Thanks for leaving the comment. I am a vegetarian and don’t cook non veg so that is kind of difficult. But I will sure try to put some snacks and starters soon.
